秋季是吃蟹的好时节，各色青蟹早已崭露头角，成为热销产品。广东近海，海蟹居多，青蟹最为著名。相对于江南大闸蟹的名声在外，生活在珠江口咸淡水区域的青蟹总是显得淡定而从容。广东一年四季都有产青蟹，以青蟹的不同生长阶段分为：水蟹、肉蟹、膏蟹、奄仔蟹、重皮蟹、黄油蟹等。每个阶段的青蟹味道都不同，例如肉蟹以肉为美，优质肉蟹的蟹肉丰满、爽滑鲜甜；膏蟹以蟹膏美味著称，各个阶段的青蟹价格亦有所不同。
