【云上岭南】Guangzhou people: “No chicken, no banquet” 广州那些几近失传的一代名鸡

“No chicken, no banquet” is the accepted rule of the Guangzhou people. There are more than 200 cooking methods for chicken, which not only have excellent color, aroma and shape, but also form their own flavor characteristics. Guangzhou has many famous chicken dishes in its history, such as Qingping Chicken and Jiangnan Baihua Chicken. Although we may not have the opportunity to taste these chicken dishes, we can feel the passion that the people of Guangzhou have for food from the recipes left behind.

广州人“无鸡不成宴”,对鸡的烹调方法已超过二百种,不但色香味形俱佳,而且形成各自的风味特色。广州有很多在历史上远近闻名的鸡肴烹饪法,如“广州第一鸡”的清平鸡;20世纪二三十年代出现的江南百花鸡等。这些鸡肴我们虽然可能没有机会品尝,但从遗留下的菜谱里,我们能感受到广州人对美味的极致追求。
